Water-soluble vitamins dissolve in water rather than fat, which means the body doesn’t store them the way it stores fat-soluble vitamins — excess amounts are generally excreted in urine rather than banked in tissue. That makes regular dietary intake more important for this group, since reserves don’t build up the same way. There are nine water-soluble vitamins: vitamin C and the eight B-complex vitamins (B1, B2, B3, B5, B6, B7, B9, and B12).
Vitamin C
Vitamin C (ascorbic acid) is the only water-soluble vitamin outside the B-complex family, and it plays several distinct roles:
- Antioxidant activity – vitamin C helps neutralize free radicals, reducing oxidative stress in cells.
- Collagen synthesis – it’s a required cofactor for producing collagen, the structural protein in skin, connective tissue, and hair. This is part of why vitamin C deficiency shows up as skin and connective tissue problems.
- Immune support – it supports the production and function of white blood cells and helps protect them from oxidative damage.
- Blood pressure – a pooled analysis of clinical trials found vitamin C supplementation was associated with modest reductions in blood pressure (roughly 5 mmHg systolic, 2 mmHg diastolic in short-term trials), though it isn’t considered a treatment for hypertension on its own.
Sources: citrus fruits, bell peppers, strawberries, broccoli, and leafy greens. Vitamin C is heat-sensitive, so cooking reduces the amount retained in food.
Vitamin B1 (Thiamine)
Thiamine acts as a coenzyme in carbohydrate metabolism, particularly in energy production, and supports nerve signal transmission through its role in synthesizing acetylcholine.

Vitamin B2 (Riboflavin)
Riboflavin helps convert carbohydrates, fats, and protein into usable energy (ATP) and supports the health of skin, the digestive tract, the liver, and blood cells.

Vitamin B3 (Niacin)
Niacin supports energy metabolism and nervous system function, and is notable for its effect on blood lipids — it can lower LDL cholesterol and triglycerides while raising HDL cholesterol, though prescription-strength niacin for cholesterol management should only be used under medical supervision due to side effects at high doses.

Vitamin B5 (Pantothenic Acid)
Like the other B vitamins, B5 helps convert food into energy. It also supports the health of the nervous system, skin, hair, and adrenal hormone production.
Sources: broccoli, mushrooms, whole grains, eggs, and dairy. B5 deficiency is rare since it’s present in a wide range of foods.
Vitamin B6 (Pyridoxine)
B6 is involved in energy metabolism, red blood cell production, and nerve signal transmission. Together with B9 and B12, it helps regulate homocysteine levels in the blood — elevated homocysteine has been linked to cardiovascular risk.

Vitamin B7 (Biotin)
Biotin supports energy production from carbohydrates, fats, and protein, and is best known for its role in keeping hair, skin, and nails healthy — which is why it’s a common ingredient in hair-growth supplements and shampoos. Genuine biotin deficiency is uncommon, and taking extra biotin won’t help hair that’s thinning for reasons unrelated to biotin status (androgenetic alopecia, for instance).

Vitamin B9 (Folate)
Folate is essential for DNA synthesis and, together with B12, red blood cell production. It’s particularly important before and during pregnancy, since adequate folate reduces the risk of neural tube defects.

Vitamin B12 (Cobalamin)
B12 is required for red blood cell formation, DNA synthesis, and nervous system function. It’s found almost exclusively in animal-sourced foods, which is why vegans and strict vegetarians are advised to supplement or use fortified foods — deficiency can cause fatigue, nerve problems, and anemia if left unaddressed.

Signs of water-soluble vitamin deficiency
Because these vitamins aren’t stored long-term, deficiency can develop faster than with fat-soluble vitamins if intake is consistently low. Watch for fatigue, mouth sores or cracked lips, hair thinning, skin changes, or (for B12 specifically) numbness and tingling. A blood test can confirm a suspected deficiency — it’s worth getting one before starting high-dose supplements, since taking more than you need doesn’t provide added benefit and, for a few of these vitamins, can cause side effects at high doses.
